The small town of Bowmore is the capital of Islay, and since 1779 has been the proud home of its legendary distillery – the oldest on the iconic whisky island. The sophisticated spirit from Bowmore Distillery is delicately peated and well-balanced. Today, it is one of the most desired single malt whiskies in the world.

“For its final 15 years, we matured this 23-year-old treasured Islay malt inside a traditional Port pipe. Over time, the subtly smoky Bowmore spirit weaved its way into the thick, fruit ladened oak staves of the cask, slowly evolving into a truly exceptional and original dram – a legendary and glorious chapter in the Art of Maturation.”  

Nose: cherry blossom, delicate smoke, cocoa

Palate: coastal embers, rose water, dark honey

MACDUFF →

Built on the banks of the River Deveron, Macduff Distillery has tall stills with uniquely angled lyne arms that amplify the fruitiness of this hearty highlander. For many years, Macduff’s fine spirit has been the backbone of William Lawson’s famous blend. Today, we celebrate this rarely bottled single malt at an amazing 26 years old.

This bold creation is a result of bringing together two casks of mature Macduff spirit, both finished in their respective casks for a stunning six years. By combining the generous influences of Oloroso Sherry and French red wine, we have created a sensational dram that showcases our mission – the Art of Maturation. Pure gold!”  

Nose: dried apricot, sultanas, sweet pastry

Palate: mulled fruits, waxy malt, black tea

The Fiddichside Inn is a legendary whisky bar – one tiny room dedicated to sharing hearty laughs, stories and drams. This stunning 35-year-old whisky (distilled upstream on the beautiful salmon river, the Fiddich) is an homage to the hospitality enjoyed at Speyside’s famous tavern, by whisky lovers from around the world.

“This eminent 35yo ‘tea-spooned’ single malt has been skilfully crafted by using three finishing casks – Oloroso, PX Sherry and French red wine. The oak influences have combined beautifully with the venerably aged spirit, revealing the sophisticated character within this epic dram – true excellence in the Art of Maturation.”  

Nose: apple pastry, tropical malt, stem ginger

Palate: soft plum, fruity fudge, poached apple

Finish: creamy cigar, lingering sweet oak spice

TOBERMORY→

FINISH: Red Wine Barriques

Founded in 1798, in the heart of the Isle of Mull, Tobermory Distillery remains the only whisky producer on the picturesque Hebridean island. This unpeated Tobermory single malt has been matured in a combination of red wine casks, resulting in a delicious dram that is as vibrant as Mull’s famous colourful Balamory cottages.

“Twelve years ago, this rare 28-year-old Tobermory spirit was filled into red wine barriques by the original Murray McDavid Team, led by Jim McEwan. In 2014, the casks arrived at Coleburn Distillery Warehouses, the new home of Murray McDavid, where they were closely monitored. Today, we proudly share this truly unique whisky – sláinte.”  

Nose: red currants, dark plum, salted caramel

Palate: grilled strawberry, coastal, hint of smoke

ALLT-A-BHAINNE→

Allt-A-Bhainne Distillery sits on the slopes of Ben Rinnes, between Dufftown and Glenlivet, deep within Speyside. The distillery was built in 1975 to provide an especially fruity and fragrant spirit for the world-renowned Chivas Regal blend. Today, we honour the Allt-A-Bhainne single malt by presenting this artfully matured dram.

“Nurtured for its final five years in juicy Madeira wine casks from our wood partners, Justino’s, on the island of Madeira. This Allt-A-Bhainne Scotch whisky has developed superb depth and complexity – an inspired collaboration of oak and spirit and a favourite amongst our Whisky Creations Team.”  

Nose: dried fruits, oak char, honied malt

Palate: poached pear, baking spice, toffee

Finish: toasted almond, mellow sweet oak

CAOL ILA→

SINGLE MALT SCOTCH WHISKY

Built in 1846, Caol Ila Distillery was named ‘Sound of Islay’ in Gaelic, after the atmospheric narrow strait that gently crashes the sea wall of its impressive stillhouse. The ethereal smoky spirit that flows from its tall copper stills is ideal for artful maturation. Caol Ila is a true favourite of our Whisky Creations Team.

“We have balanced this fresh Islay single malt by finishing it for four years in compact Rye whiskey casks, from Koval Distillery, our partners in the US. Our team particularly enjoy working with these small, flavourful casks, especially when combined with pleasantly peated spirit – the results never fail to impress!”

DAILUAINE→

SINGLE MALT SCOTCH WHISKY

The Dailuaine Distillery is tucked deep within a lush, fertile ‘green vale’ between the River Spey and Ben Rinnes. This steadfast single malt distillery produces a spirit that is as bountiful as its surroundings. We enriched the fruity flavours of this Speysider by maturing it in luscious Madeira wine barriques.

“Don’t be fooled by age; high quality casks rapidly elevate a whisky far beyond its years. Matured for five of its six years in fresh Madeira casks, the development of this robust single malt has been impressive. It has resulted in a superb dram full of character that glows with a beautiful deep sunset hue.”  

Nose: fruity nougat, orange peel, sweet malt

Palate: toasted oak, caramelised citrus, floral

Finish: oily, orange syrup, sweet oak spice

GLEN GARIOCH→

SINGLE MALT SCOTCH WHISKY

REGION: Highland

In the heart of Aberdeenshire, Glen Garioch (Glen Geery) Distillery was officially established in 1797. One of the earliest and smallest producers in Scotland, its brilliant fruity single malt is rare and highly prized. We finessed this heritage spirit in opulent Grand Cru casks from the French winemakers in Saint-Julien.

“During its final three years, the vibrant spirit of Glen Garioch has drawn influence from the abundantly fruity Bordeaux wine casks, introducing layers of sophistication. Over the years, the French oak tannins have softened, beautifully balancing with this classy Highlander to reveal this graceful and noble dram.”  

Nose: strawberry, vanilla cream, marzipan

Palate: spiced apple, currants, sweet oak

Finish: hint of cocoa, fresh malt, mellow spice

GLENALLACHIE→

SINGLE MALT SCOTCH WHISKY

REGION: Speyside

Built in 1967, Glenallachie Distillery is relatively new to Speyside, but its spirit attracts a cult-like status amongst whisky lovers. Extra-long fermentation increases the bold fruitiness of Glenallachie single malt. We further refined this youthful, stylish Speysider by fully maturing it in hearty Italian wine barriques.

“As clear new make spirit, this Glenallachie was filled into Barolo red wine casks from the Piedmont region. This viscous spirit has developed an attractive bright russet hue and vibrant fruitiness has woven beautifully into this succulent single malt – a sophisticated coming together of Italy and Speyside.”  

Nose: red currants, heather honey, Demerara

Palate: honeycomb, mixed berries, butterscotch

Finish: creamy malt, rose water, baking spice

GLENROTHES→

SINGLE MALT SCOTCH WHISKY

REGION: Speyside

FINISH: 1st fill Ximénez-Spinola PX Sherry

Since 1879, Glenrothes Distillery has been producing high-quality spirit, achieved by quick fermentation and slow distillation through tall stills. Its fine whisky is highly coveted by Scotland’s leading whisky blenders. Here, we present Glenrothes single malt that’s been augmented by time maturing in PX Sherry casks.

“We have emboldened this classy Speyside malt by finishing it for two years in genuine Sherry barriques from Ximénez-Spinola, our cask partners in Jerez. This rewarding dram beautifully demonstrates the importance of our casks’ authenticity, fundamental to our success in the Art of Maturation.”  

Nose: fruity coffee, chocolate berries, vanilla

Palate: creamy malt, sweet mocha, baking spices

Finish: baked apple, cocoa powder, cinnamon

GLENTAUCHERS→

SINGLE MALT SCOTCH WHISKY

FINISH: 1st fill Tokaji Wine

Built in 1897, Glentauchers Distillery produces a gentle single malt with an elegant, light and fruity character; one of Speyside’s best kept secrets. We filled this excellent spirit into sweetly opulent barriques that were previously used to age one of the world’s oldest classified wines – Tokaji, from northeastern Hungary

“Matured for its final three years in lusciously sweet wine casks, this fruity Speyside single malt has sumptuously united with the delicacies of the exotic Hungarian wine, delivering a majestic mouthfeel and captivatingly intricate flavours – excellence in the art of Scotch whisky maturation.”

LEDAIG→

SINGLE MALT SCOTCH WHISKY

REGION: Speyside

FINISH: 1st fill Uitvlugt Rum

In 1795, John Sinclair, a local kelp merchant of Mull, built a port on the waterfront of Tobermory. Three years later, Sinclair established the Ledaig Distillery in his picturesque harbour, importing barley from the mainland for his peat-fired stills. Today, we enjoy this heavily peated, maritime malt, elevated by exotic rum casks from Guyana.

“We often talk of rare spirit, here we talk about rare oak casks! The Uitvlugt Distillery produced a rich, ester-heavy style of rum, until it closed in 2000. Here, we have gracefully finessed the historical, smoke-ladened Ledaig spirit with the tropical cask influences lent from a lost legend of the Caribbean.”  

Nose: banana custard, smoky apple, coastal

Palate: grilled peach, pineapple, sweet embers

Finish: oily peat, tropical fruits, faint sea spray

LINKWOOD→

SINGLE MALT SCOTCH WHISKY

REGION: Speyside

FINISH: 1st fill Murça Tawny Port

Established in 1821, Linkwood Distillery is one of Speyside’s oldest producers of single malt whisky. In contrast to Linkwood’s rich history, we have put a modern spin on its light and fruity spirit by maturing it in Tawny Port wine barriques from Caves de Murça, our cask partners in Portugal’s famed Douro Valley.

“Whisky needn’t always be judged on its age; high quality finishing casks rapidly elevate a spirit far beyond its years. We matured this Linkwood spirit for five of its six years in lavishly fruity Port casks, which has resulted in an astonishing dram that highlights the unexpected and rewarding possibilities of the Art of Maturation.”  

Nose: mixed berries, honey, chocolate nuts

Palate: Black Forest, toffee, walnut cake

JUNIPER HILL→

SINGLE MALT SCOTCH WHISKY

Close to the River Findhorn, set in the hills of the Highlands, this spirit is made at an ‘antique’ distillery, whose brands flourish throughout the globe. Taking its name from the juniper bush, this highly successful single malt forms the base of a proprietary blend that introduced Scotch whisky to the world.

“For this batch of Juniper Hill, we filled clear new make spirit from the Highlands of Scotland into Tawny Port wine barriques from the sun-soaked valleys of Portugal. The result is a bountiful dram that’ll keep you coming back for more! A maturation journey that started eight years ago and now ends in your glass – saúde.”

This youthful heavily peated single malt is from a distillery built in 1798, beside a harbour on an island on Scotland’s west coast. Our mystery spirit is known by the original distillery name, meaning ‘safe haven’ – an outstanding malt that will put a smile on the face of lovers of peated whisky as they puzzle its origins…

“We have balanced this wonderfully vibrant spirit by finishing it for three years in small Bourbon casks, from Koval Distillery, our partners in Chicago, USA. The vivacious and sweet flavours derived from the American oak and peated Hebridean spirit, have combined to produce a Mystery Malt that dazzles the palate – enjoy!”

INVERGORDON→

SINGLE GRAIN SCOTCH WHISKY

Invergordon Distillery is the fourth largest producer of grain whisky in Scotland. Using mainly corn and wheat, the distillery creates an oily, sweet spirit which is most often enjoyed as a blended Scotch. Today, we present this versatile spirit in its pure form by maturing it in a way never seen before!

“This 15-year-old Invergordon whisky has been finished for its last three years in casks previously used to mature heavily peated single malt from Caol Ila Distillery. The resulting dram is a complex and delightful symphony of flavour that will please and surprise those yet to discover the full potential of single grain whisky.”

Established in Edinburgh in 1885, North British Distillery is Scotland’s third largest producer of grain whisky, which forms the base of many famous blends enjoyed around the world. Saved from being blended, we have matured this aged North British spirit as a single grain whisky in luxurious Sauternes dessert wine barriques.

“After four years, the delectable influences of sweet Bordeaux wine on the creamy North British spirit have created a flavoursome dram, with an alluringly delicious mouthfeel. We highly recommend you treat yourself to a glass of this exotic single grain whisky and enjoy it with your favourite French cheese – c’est magnifique!”
